Walleye Cakes
Ingredient List:
2 lb bag walleye fillets
1 1/2 sleeves Ritz Cracker (crushed)
1 heaping tbsp mayo
1 heaping tsp lemon juice
1 tsp soy sauce
1 egg
Garlic powder
red pepper
1/2 cup chopped celery
1/2 cup chopped onion sauteed
Put in bowl & place in freezer temporarily
Directions:
2 lb bag of wallet fillets; thawed
Place fillets on a plate and microwave 4 minutes
repeat until all fillets are cooked
Carefully drain liquid off cooked fillets
let cool
flake in a bowl
In a separate bowl combine mayo, lemon juice, soy sauce and egg.
Add the celery and onions once chilled. Approximately 15 min to chill, or until sticky.
Add fish and coat with wet mixure.
Add garlic powder and red pepper to taste.
Add crushed sleeve of ritz crackers
Mix Well
Melt butter into frying pan
Roll mixture into golfball size.
Place rolled mixture into frying pan, once golden press down to make into a patty and flip to brown other side.
Put in plater - DO NOT put into covered crock pot to keep warm, the cakes will fall apart.
"What the Hell" Grilled Walleye Fillets
2 lbs walleye fillets; skinless
1 Lemon
1 tsp extra virgin olive oil
Granulated garlic
Old Bay seasoning
Slap Ya Mama seasoning
Directions:
Preheat grill to 400 degrees
Cover grill bars with foil or a grill mat
Drain fillets and pat dry then lightly coat with extra virgin olive oil.
Dust fillets with granulated garlic and old bay seasoning.
Sprinkle slap ya mama seasoning to taste. If you add too much slap ya mama you will say "What the hell" when you take a bite.
Cook on each side about 3 minutes.
Slice lemon in half then again into 1/4" slices and garnish fillets.
